超松软直接法面包

很多朋友一定觉得每次在制作直接法面包时候总是得不到那松软的口感。在此,介绍大家这款超松软,组织如棉花般的直接法面包。

这款面包不但无含鸡蛋,而且材料都是偏向较天然的食材;也是很容易找到的食材咯!还可以制作出不同造型的面包,可以拿来制作小餐包,披萨饼皮,欧式面包,甜面包等等。

以下的短片是在制作面包后12小时拍摄的,证明直接法面包在隔了12小时还是很松软咯!

话不多说,以下就是美味面包的食谱与做法:

食谱:

A:
马铃薯泥* 150克
高筋面粉 370克
幼糖 50克
酵母 5克【一茶匙尖】
盐巴 5克 【一茶匙平】

B:
全脂牛奶 75克+ -
UHT 鲜奶油 75克+-

C:
牛油 90克

做法:


  1. 将马铃薯*清洗干净,切块蒸熟或煮熟,趁热压成泥,待冷备用。
  2. 将预先弄好的【1】加入【A】的其余材料里面,拌匀。
  3. 然后将【B】分次加入,搅拌成粗团。
  4. 把面团掰开,放入出来【C】,用面团把牛油包起来,用慢速搅拌至完全混合,然后该中速继续将面团搅拌至光滑面团及出现薄膜的面团即可。
  5. 把面团拿起,收面,然后放在涂油的碗盆内,盖上保鲜膜或湿布,搁在温热地方让面团发酵至两倍大,约60分钟。
  6. 1小时候,将面团取出,放在洒粉的桌面,用双手将面团内的二氧化氮排除【排气】,然后分割成适量*的重量,滚圆,放在纸托上。喷洒少许水份,进行最后发酵75分钟。
  7. 如果是做香肠卷,那就必须分割,滚圆,休面10分钟了才包上香肠,排盘,最后发酵60分钟。
  8. 在面团发酵时间完毕前15分钟,即可把烤箱预热【160 度】上下火。
  9. 把发酵完毕的面包团放入预先预热的烤箱里,烘烤约 10 - 15分钟或浅褐色即可出炉。
  10. 出炉后轻敲烤盘,搁在铁架上冷却即可享用。 
提示: 
  • 薯类,如马铃薯,甜番薯的一部分营养是在它的外皮,所以清洗干净了是可以连皮一起吃的。
  • 幼糖可以用黄金糖浆,蜂蜜,枫叶糖浆来替代。份量一样。
  • 全脂牛奶可以用清水,低脂牛奶,无糖豆奶替代。【出炉的面包组织可能会和原食谱的有差别】
  • UHT鲜奶油即是动物性鲜奶油,如果没有此材料可以用牛奶,清水,无糖豆奶替代【出炉的面包组织可能会和原食谱的有差别】
  • 至于牛油,可以选用无盐或有盐的或者把它换成较健康的橄榄油,玉蜀黍油。
  • 面团第一次发酵后,如果要做简易造型,如以下图片的,那就直接排气,分割,称重,滚圆收面后直接排盘或放在纸托上,直接最后发酵75分钟。

To confirm an order, a non-refundable deposit of 50% of the balance or agreed amount is required. This will secure your requested date and cake order. The outstanding balance is due no later than 5days ( fondant cake / cupcake ) / 3days ( normal fresh cream cake ) before collection/delivery.
If you wish to have alterations that affect the cost, after this date, the balance will be adjusted accordingly.
